Crunchy No Bake Cookies

We were craving some homemade cookies and since I hate to turn on the oven unless I have to when it's warm out, Scarlett and I whipped up a batch of no bake cookies.

Here's what you will need if you want to make some too:


1 3/4 cups white sugar
1/2 cup milk (we use almond milk but you can use any kind of milk and it still seems to turn out just fine)
1/2 cup butter
4 tablespoons unsweetened cocoa powder
1/2 cup crunchy peanut butter
3 cups quick-cooking oats
3 tablespoons chia seeds
3 tablespoons flax seeds
1 teaspoon vanilla extract

And here's what you will do with those ingredients:

♥In a medium saucepan, combine sugar, milk, butter, and cocoa.
♥Bring to a boil.
♥Once boiling, stir continuously for approximately 1 1/2 minutes.
♥Remove from heat, and stir in peanut butter, oats, chia seeds, flax seeds and vanilla.
♥Drop by tablespoon onto wax paper lined cookie sheet.
♥Place in fridge and let cool until hardened.
♥Once hardened remove from cookie sheet, eat or store in an airtight container in the fridge.
I let Scarlett lick the spoon when we were done since these have no eggs in them and she was quite delighted! I didn't even have to wash the spoon and cookie scoop because she licked them so clean, ok maybe I tossed them in the dishwasher but she licked every ounce of cookie off of them.
